Besides the time that it takes to manage the business end of things, how much time do you see putting into managing the restaurant itself?

I'll work a lot of floor shifts at first, and then turn over that responsibility to someone I have trained and trust.
I've got several other businesses, so someone else is going to play a large role in running this one
I'm planning on having my managers manage the restaurant, while i focus on managing the business end and the bigger picture
I'm expecting that my week will start on Friday, and my Monday will become my Friday (in other words, my weekends will be shot, at least for a while).
